Eco friendly meals

You can also save energy when cooking - by choosing meals that only require a few minutes to cook or using a high-pressure cooker, for example. Eating together is another way! Besides being enjoyable, it is often less expensive. Moreover, for a real eco-friendly meal you can use organically-grown vegetables in season, preferably from a source in your own region.

Recipe: Oven dish with potatoes and ground round (from Papa's Pasta)
Ingredients (for four persons):
250 g ground round
2 dl whipping cream
2 onions
2 tomatoes
150 g ripe cheese
1/2 tea spoon cumin powder
1/2 tea spoon cinnamon
1 table spoon olive oil
Freshly ground pepper
Salt

Preparation:
Pre-heat the oven to 200°C. Grate the cheese. Cut the onions and tomatoes into small pieces. Fry the ground round loose in 1 table spoon of oil. Add cumin and cinnamon. Mix the sliced potatoes with the onions, pieces of tomatoes and ground round. Add salt and pepper to taste and place in an oven dish. Pour the cream over the ingredients and sprinkle with cheese. Place the dish in the oven for 30 minutes until the potatoes are done.

Recipe: Endive stew with ham, cheese and yoghurt (from Papa's Pasta)
Ingredients (four persons):
900 g mealy potatoes
500 g fresh endives
250 g ham strips
100 g ripe cheese
200 ml yoghurt
50 g butter
Salt
Freshly ground pepper
Nutmeg

Preparation:
Peel the potatoes and cook them in water with a pinch of salt until they are done. Meanwhile, wash the endives and grate the cheese. Mash the cooked potatoes. Add yoghurt and butter to cream the mashed potatoes. Place the pan on the lowest flame. Mix the grated cheese and ham through the mashed potatoes, with salt, pepper and nutmeg. Add the endives in portions and allow them to shrink.

Recipe: Grilled vegetables with rosemary and garlic (from Papa's Pasta)
Ingredients (four persons):
500 g potatoes with skins
10 cloves of garlic
2 carrots
500g pumpkin (1 small one)
4 onions
4 rosemary sprigs
Olive oil
4 table spoons of mayonnaise
4 table spoons of yoghurt
2 tea spoons of dried Italian herbs
Sea salt
Freshly ground pepper

Preparation:
Pre-heat the oven to 180 °C. Wash the potatoes and cut them in fourths. Peel the carrots and cut them in thick slices. Clean the pumpkin and cut it (with skin) in blocks. Peel the onions and cut them in halves. Oil the oven dish and place all the vegetables in it. Pour 6 table spoons of oil over the dish. Season with salt and pepper to taste. Shake carefully until everything is covered with oil. Lay the unpeeled garlic cloves between the vegetables and stick the sprigs of rosemary in between. Place the dish in the oven for 40 minutes, until the vegetables are done, with a brown, crisp topping. Meanwhile, mix the mayonnaise, yoghurt and Italian herbs. Serve the vegetables with the sauce.
